Make sure the main power switches on for each of the bowls you want to clean set the corresponding cold drink and frozen beverage switch to the cold drinks setting. If the product the ball is slush, let the machine run in cold drink mode for approximately five minutes. If the product is liquid you may proceed immediately with the next step. Open the spigot to drain the bowl. when the bowl empty turn the main power switch off. Next fill the bowl with cool tap water and turn the main power switch on. Make sure the machine is still in cold drink mode and let the auger rotate for at least thirty seconds. Drain the water out of the machine, turn the main power switch off, and unplug the machine. With the machine off and unplugged, it's time for disassembly. Start disassembling the bowl by pressing the lock button on the rear of the cover and sliding the cover forward. Next remove the condensation ring located under the spigot. Remove the spigot pin and pull the spigot assembly upward. We'll keep the flat metal bowl lever on the underside of the bowl and on either side of the spigot. Lift hold the lever upward pull the forward. Remove the auger by sliding it forward off the cooling cylinder. Then pull the round black magnetic rotor assembly off the end of the freezing cylinder. Finally, remove the bowl gasket from the rear of the dispenser. Remove the drip trey by lifting up and pulling forward. Place the disassembled parts in warm water with a mild detergent and wash thoroughly. Rinse the parts and place them in a sanitizing solution for at least one minute. Let the parts air dry completely before reassembling. To clean the machine start by cleaning the cooling cylinder with a clean cloth and sanitizing solution. Wash all surfaces of the machine. Now we're ready to reassemble the machine start by a applying lubricant to the inside of the magnetic rotor assembly. Next install the magnetic rotor assembly onto into the front of the cooling cylinder. Apply lubricant to the end of the magnetic rotor assembly. Slide the auger onto the freezing cylinder and rotate it to engage the magnetic rotor assembly. Replace the bowl gasket at the rear of the dispenser making sure that it is firmly in place with the flat side going in first. Slide the bowl over the cooling cylinder lining it up against the rear gasket. Firmly push the bowl in place until the flat metal bowl lever on the front underside of the bowl can be engaged. Before installing the spigot, lubricate the edges of the big with lubricant. Install the spigot into the front of the bowl and secure with the spigot pin. Install and secure the condensation ring. Install and secure the drip tray. Be sure to sanitize the unit immediately before each use. Prepare two gallons of sanitizing solution for each bowl and pour the solution into the bowl. Be careful not to exceed the maximum fill line for your model. Use a sanitized soft bristle blush dipped in sanitizing solution to clean all the bowl surfaces and underside of the bowl cover. Plug the machine in, turn the power switch on, and set the dispenser to cold drink mode. After approximately five minutes open the spigot and drain the solution.
